From a Low-lying site sitting on deep clay loam. Plunkett Vineyard, Spring Creek, Marlborough.
Hand harvested. Fruit was 100% destemmed & given a gentle pigeage (foot stomped). Gently plunged once a day during primary (wild) fermentation.
Total time on skins was 28 days before being basket pressed into a seasoned French oak puncheon.
Once in barrel, the wine was given 2-3 lees stirs to retain freshness and add texture. After spending 3.5 months in barrel, the wine was then racked into a stainless steel tank and was left to settle for one month before being given a small addition of SO2 (Sulphur) and bottled unfined and unfiltered.
