Hand harvested. Fruit was destemmed into open top stainless steel fermenter where it underwent wild fermentation utilising a vineyard ferment starter (pied du cuve). 28 days on skins before being pressed to neutral oak barrels. After spending 9.5 months in barrel, the wine was racked to tank to be assembled & settled for approx. 3 weeks before being bottled unfined & unfiltered with no SO2 or additions of any kind.
This wine loves oxygen & will only get better the longer it is open. Serve slightly chilled.
