Cherry Coloured Funk - 2021

Vinification: Hand harvested. 100% Whole cluster Pinot Noir was placed in an open top fermenter where the fruit underwent wild fermentation. Gently hand plunged once a day during primary. After spending 28 days on skins, the fruit was basket pressed to a seasoned French oak demi-muid. Full malo-lactic fermentation spontaneously occurred once in barrel, after which a small SO2 addition was made. The wine was racked to VC after 10 months élevage & spent 2 months settling before being hand bottled by gravity unfined & unfiltered. 

Service Note: This wine loves oxygen so decanting is highly recommended if possible. Serve just below room temperature (approx. 12-15 degrees Celsius).
