Cuvée Forte – definition: a loud passage, sound or tone
Vinification: Whole bunch pressed straight to barrel - No added enzymes, SO2 or yeasts. Wild natural fermentation, followed by 100% Malolactic fermentation. SO2 added post Malo. Lees stirred at the on-set of malolactic fermentation and left to settle for 9 months in 265L Cigars and some 600 Demi Muid. Assembled and racked to two 5yr+ 600L Demi Muid for a further 9months. It was then racked to tank where it naturally settled for 2 months to allow bottling unfiltered.
Un-fined and unfiltered.
